「探店」十七味北京烤鸭店 #2

接下来重点说说这家烤鸭、火锅兼具的烤鸭店吧。

首先谈谈烤鸭店的装潢,整体来说偏中式。桌椅都用了木色,顶上的吊灯是油纸伞的造型,有种杭州的味道。


最喜欢的还是墙上的壁画,画着古代的建筑、街道以及老百姓,趣味十足,在这样的环境下吃饭挺有意思的。


现在的烤鸭店基本都是当着顾客的面将一只完整的鸭子一片一片地切好,然后摆盘,这家店也不例外。

切烤鸭这项工作看起来很普通,其实是很关键的环节。

首先是切烤鸭师傅的刀工,刀工越好越有赏心悦目的体验感,还可以提升顾客食欲。其次就是切的时间,本身烤鸭一端上来就不断在降温,如果师傅动作利落,食客们品尝到的烤鸭就会更美味。


口感上,肉质称得上细嫩,就是鸭皮没有那种油滋滋的感觉。

讲到摆盘,这家店还是比较有颜值的,用精致清新的木质餐盘,分为配料、烤鸭、面皮三个部分,格调是有的。

这份烤鸭的配料也十分新鲜,这无疑更提升整体口感,尤其是清香多汁黄瓜条可以降低烤鸭的油腻度,当然这也要取决于个人的口味。


为这份烤鸭做个整体评价,大致如下:烤鸭本身7分,面皮8分,配料蘸酱8分,整体给个7分。如果将它与便宜坊的烤鸭比较,事实上如果再肥一点是足以与其抗衡的。
